'Why should meat eaters have all the fun? Take a look at this vegetarian version of a classic Parsi Dhansak. VEGETABLE DHANSAK Ingredients 1 cup chopped pumpkin 1 large brinjal, roughly chopped 1 cup split pigeon peas ½ split Bengal gram ¼ cup split red lentils ¼ cup field beans (vaal), soaked 1 teaspoon dhansak masala 2 medium tomatoes ½ teaspoon turmeric powder Salt to taste 1 tablespoon oil 2 medium onions, finely chopped 1 tablespoon ginger-garlic paste 1 teaspoon red chilli powder 1 teaspoon coriander powder ½ teaspoon cumin powder Brown rice for serving Fried onions for garnishing Fresh coriander sprigs for garnishing Lemon wedges for garnishing Onion rings for garnishing Method 1. Heat pigeon peas, Bengal gram, red lentils, vaal, pumpkin and brinjal in a pressure cooker. 2. Roughly chop tomatoes and add to cooker alongwith ¼ teaspoon turmeric powder, salt, 3-4 cups water, cover and pressure cook on high heat for 15 minutes. Reduce heat and cook for 10 minutes. 3. Heat oil in a deep non-stick pan. Add onion and sauté till golden. Add ginger-garlic paste and sauté for 1 minute. 4. Add chilli powder, remaining turmeric powder, coriander powder, cumin powder and sauté on low heat for 1 minute. 5. Add the pressure cooked mixture and mix. Whisk to mash the mixture. Add some water, mix and cook on low heat for 5 minutes. 6. Add dhansak masala, mix and cook for 10 minutes. 7. Top brown rice with fried onions. Garnish dhansaak with coriander sprigs and serve hot with brown rice, lemon wedges and onion rings.
